| People who eat diets low in vitamin C or potassium are at greater risk of stroke, and fruits and vegetables are rich in both! And it's yet another example of how food works but supplements don't quite cut it. A Dutch study of women over age 55 revealed that while vitamin C-rich foods were protective against stroke, vitamin C supplements were not.

| Wu's study found that women whose diets put them in the highest 25 percent of soy consumption (the equivalent of more than three servings of tofu a day) had 15 percent lower blood levels of an important form of estrogen. Women who ate average amounts of soy, however, showed no drop in estrogen.
So is it the soy? In my opinion, soy is one big piece of the Asian cuisine puzzle. Certainly the smaller servings of red meat and ample servings of vegetables don't hurt, either.

As my dogs age I do include extra vitamins in their diets. My dear animal companion, Charlie, was a Newfoundland who died in September 1997, jusr as my fust book was published. The average lifespan of a Newfoundland is about eight years; however, Charlie lived to be fourteen. I gave him 1,500 mg. of vitamin C and 200 IU of vitamin E (d-alpha tocopherol) daily. There is no doubt in my mind that Charlie's natural diet and supplements added years to his life and kept him in good health. Cut chicken into small pieces. Run carrots through food processor. Mix chicken and carrots with rice and if there is any fat from the chicken, pour about two teaspoons over the mix. Serve at room temperature.

Evidence is consistent that diets high in potassium (over 4.5 grams per day) and low in sodium (under 6 grams per day) decrease the risk of high blood pressure and the risk of strokes and heart attacks.
