Soybeans do supply some missing amino acids in the vegan diet, but it lacks other essential amino acids and has additional problems. It contains protease blockers that can interfere with enzyme function and inhibit the thyroid. The soybean has one of the highest glutamate levels of any plant, and when solubilized or hydrolyzed, the glutamate is freed to do its damage. When people with diabetic nerve damage switch to a vegan diet (no meat, dairy, or eggs), improvements have been reported after several days.35 In one trial, pain (page 338) completely disappeared in 17 of 21 people.36 Fats from meat and dairy also contribute to heart disease (page 98), the leading killer of people with diabetes. Vegetarians also eat less protein than do meat eaters. The reduction of protein intake has lowered kidney damage caused by diabetes37'38 and may also improve glucose tolerance.
Rickets is more likely to occur in a child consuming a pure vegan diet (which does not include animal products and thus no vitamin D) than in a child consuming milk or other animal foods. Dark skin and/or a lack of sunlight exposure (which reduces the amount of vitamin D made in the skin) also increase the risk of developing rickets. The few foods that contain vitamin D (page 607) include egg yolks, buttet, vitamin D-fortified milk, fish liver oil, breast milk, and infant formula.

It looks as if there is something about the diet that helps prevent fat buildup in cells. These studies show様oudly and clearly葉hat the accumulation of fat in the cells and all the problems it causes are not simply a matter of genes.

For now, just enjoy the weight control that is kicking in on its own. Losing excess weight feels great, of course, but weight loss improves your insulin sensitivity in addition to the effects of the diet change itself. Easy cholesterol control. If you have had a cholesterol problem, the program you are now beginning is far more powerful than typical cholesterol-lowering diets. This should be no surprise.
